Recipe: colorful legume salad
INGREDIENTS:
- 1 box of 6 mixed legumes
- 2 celery stems bevelled
- ½ green pepper cut into cubes
- ½ red pepper cut into cubes
- 1/2 red onion cut into dice
- ¼ cup of canola oil
- ¼ cup of olive oil
- Juice of 1 lemon
- 4 tablespoons balsamic vinegar
- 1 clove garlic minced
- 1 pinch of sugar or more to taste
- Salt and pepper
- 2 cups of colored pasta
PREPARATION:
- Mix all the ingredients together.
- Marinate at least 1 hour before serving.
