Recipe: Granny's raspberries mousse
INGREDIENTS
3 whites egg
1 ml (1/4 tsp) cream of tartar
180 ml (3/4 cup) sugar
625 mL (2 1/2 cups) fresh or frozen raspberries, thawed and drained
PREPARATION
In a bowl, whisk egg whites with cream of tartar with electric mixer until they form soft peaks. Add the sugar gradually by whisking constantly until they form very firm peaks, about 5 minutes.
Stir in 375 ml (1 1/2 cups) raspberries and whisk for 1 minute.
Spread the mousse in cups or small bowls. The mousse is ready to be tasted or it can be refrigerated a few hours before serving.
When serving, garnish the mousse with the remaining raspberries (250 ml / 1 cup).
