Recipe: Creton pork.
INGREDIENTS
1 large onion, finely chopped
4 shallots, finely chopped
2 garlic cloves, finely chopped
1/4 cup butter
454 g (1 lb) medium-skinped pork
500 ml (2 cups) crumb of dry bread or instant oatmeal
250 ml (1 cup) of milk
125 ml (1/2 cup) chicken broth
10 ml (2 tsp) mixed spices
2.5 ml (1/2 tsp) ground savory
Salt and pepper
PREPARATION
In a saucepan, sweat the onion, shallots and garlic in the butter. Add pork, bread, milk, chicken broth and spices, mixing well. Salt and pepper.
Cover and simmer over very low heat for one hour, stirring occasionally. Continue cooking uncovered for about 30 minutes or until the liquid is completely evaporated.
