Recipe: White Gaspesian patties.
INGREDIENTS
- 4 cups white flour
- A pinch of baking soda
- A pinch of salt
- 4 tbsp. of baking powder
- ¼ cup butter or margarine
- ¼ cup of vegetable fat
- 1 cup of white sugar
- 2 tbsp. vanilla
- 1 cup of milk
PREPARATION:
- Preheat oven to 350°F
- In large bowl, mix dry ingredients.
- In another bowl, melt butter and fat.
- Stir in sugar and vanilla and mix well.
- Add the liquid mixture to the dry ingredients alternately with the milk.
- Mix as for a pastry (with the hands, it's more efficient!).
- Roll the dough to a ¼-inch thick and cut the patties with a cookie cutter or a glass whose opening is floured to prevent sticking.
- Place the patties on a baking sheet covered with parchment paper (or previously greased) and bake in the center of the oven (not too close to the bottom rack, so as not to burn the base of the patties)
- Bake at 350°F for 12-15 min or until the patties are golden brown.
- Makes 18-20 large or 30+ small patties
Bon appétit!
