INGREDIENTS
Cipate:
500 g beef
500 g calves
500 g pigs
500 g chickens
1 rabbit
2 big onions
10 or more potatoes, depending on the size
meat spice
4 cups beef broth
100 g salty bacon
Dough :
4 cups flour
4 tsp baking powder
2 eggs
1/2 cup ice water
1/2 cup milk
PREPARATION
STEP 1
Loosen the rabbit and cut all the meat into cubes. Cut the onions into cubes. Mix the meat and onions in a large bowl and season with your favorite spices. Cover the container and place it in the refrigerator overnight.
STEP 2
In the morning, cut 12 large diced potatoes. At the bottom of a large cauldron for cooking, place some strips of salted bacon and cover with a row of meat (about 5-6 cm). Cover the meat with a row of diced potatoes and cover with a layer of dough. Repeat (except for bacon) to bring everything about 5 cm from the edge of the cauldron.
STEP 3
Add about 2 pints of beef broth (Bovril diluted with water, or preferably beef consommé diluted with water). Pour until the broth slightly covers the dough above.
STEP 4
Cover and put in preheated oven at 325 ° F for 4 hours (watch for baking). After 3 hours of cooking, when the dough begins to brown, remove the lid and lower the oven to 300 ° F for about an hour, or until the dough is browned.
STEP 5
Close the oven and let stand with the lid. Depending on your oven, it may be that cooking is more or less long, take a look from time to time.
