Recipe: Date cake and mom's caramel sauce.
INGREDIENTS:
For the cake:
1 cup of pitted dates, chopped
1 tsp baking soda
3/4 cup of boiling water
1/3 cup of butter
3/4 cup sugar
2 eggs, beaten
1 ⅛ cup cake flour
For the sauce:
3/4 cup brown sugar
1/3 cup of butter
2/3 cup of evaporated milk
1 tsp vanilla extract
PREPARATION:
Preheat the oven to 350 °F and butter an 8 inch square dish (take individual mussels to make as pictured).
In a bowl, mix the dates with the baking soda.
Cover the dates with boiling water.
In a bowl, cream 1/3 cup butter with the sugar.
Add the eggs and whisk again.
Stir in the dates with their water and the flour with a spatula.
Pour the dough into the prepared dish.
Bake for 40 minutes.
In a saucepan, combine brown sugar, 1/3 cup butter and evaporated milk.
Bring to a boil and simmer for 5 minutes.
Remove from heat and add vanilla.
Pour on the cake still hot
