Recipe: Quebec Dumplings Stew
INGREDIENTS
1 lb. lean fresh pork
1/2 lb. ground beef
1/4 lb salted bacon
1 small sliced onion
2 tbsp parsley
1/4 tsp ginger
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp dry mustard
2 slices of bread, diced
1/2 cup of milk
Salt and pepper
3 tbsp fat
3 cups of water
4 tbsp flour, grilled
1/2 cup of water
PREPARATION
Spray 3 times the meat pork with fresh pork, ground beef and salted bacon.
Add onion, parsley, ginger, cinnamon, cloves and dry mustard to the meat.
Add the bread soaked and diluted paste in the milk.
Salt and pepper. Form into small balls.
Fry (grasp) the meatballs in the fat of your choice
Sprinkle with 3 cups of water.
Cover and boil gently for 30 minutes.
Stir in a glass jar flour with 1/2 cup of water.
Pour into the broth dumplings and cook, stirring, until obtaining a nice thick consistency.
