The squares with grandmother's dates
INGREDIENTS
Servings: 12
1 1/2 cups oatmeal
1 1/2 cups cake flour, sifted
1/4 tsp salt
3/4 tsp baking soda
1 cup of packed brown sugar
3/4 cup softened butter
3/4 lb of pitted dates, diced
1 cup of water
1/3 cup of packed brown sugar
1 tsp lemon juice
PREPARATION
Preparation time: 25min> Cooking time: 25min> Ready in: 50min
Preheat the oven to 350 ° F (180 ° C).
In large bowl, combine oatmeal, cake flour, salt, 1 cup brown sugar and baking soda. Add the butter and mix until a lumpy mixture is obtained. Squeeze half of the mixture into a 9-inch baking dish.
In a small saucepan, heat the dates, the water and 1/3 cup of brown sugar over a medium heat. Bring to a boil and cook until thickened. Add lemon juice and remove from heat. Spread the date filling in the dish on the base. Sprinkle with remaining oatmeal mixture and lightly squeeze.
Bake 20-25 minutes, or until top is lightly browned. Cool before cutting into squares.
